I've heard much good about both. I like the enclosed nature of the P1S and think it would be worth the extra money

Maybe check the Cura profile (or Prusa Slicer) and copy those settings over?

200C is at best, your guess for a printing temp. First, I'd make sure the material is dry. PLA and so on can all attract moisture so drying before use is a great best practice. I've had to do this a lot with the three CR-10S machines I upgraded to SKR Mini E3 v3 and the TFT35 screens

I upload via vsCode, then after uploading the new firmware, I do an M502 and M500

It sounds like you are using some pre made firmware?
