I'm going to keep the fans at 14% and give it a go

200 had me underextruding so I started at 205. Now to keep checking on it and upping the temp :)

It's only 4 degree swing, that's fine, could even be your sensor. If you are worried about that you can auto tune pid.

Picture looks good from 205-215 right?

LePaul: Is this the standard quality you get with your UMO? Are you using an original nozzle? It seems to me that even for an UMO quality should be a bit higher...after all it's an Ultimaker.

It has Anders' ruby nozzle and ColorFabb PLA/PHA

I agree. The quality is poor. The fans haven't been an improvement so far

Are you 100% sure there's no leak between the nozzle/alublock?

No, Neo.....no leaks. I have replaced the teflon, as you suggested as well.

I'm disappointed at all the problems I continue to have with this printer. I don't think my printer is up to the task of printing the many large pieces I need do. :(

Have you try different fan settings? Maybe they indeed push way too much air &/or add electrical noise tothe sensors making it fluctuate.

As I posted, I had left them at 14% and posted that video showing the temperature swaying around a bit.

That's why I was curious if the fans being slower or faster might make a difference

Try 1-4-8-12% check at what force the temp starts to fluctuate.

It's very hard on a video to see how much air actually it's being push.
